Make Breakfast Better With This Grits Souffle Recipe

4 cups of water

1 teaspoon salt (optional)

1 cup uncooked quick grits

6 tablespoons butter

3 tablespoons flour

2 teaspoons dry mustard

3 egg yolks, beaten

2 cups grated cheddar cheese

3 egg whites

In 2-quart saucepan, combine water and salt (if desired); bring to a boil. Using wooden spoon, slowly stir in grits. Cook, stirring constantly, until mixture begins to thicken. Cover and continue cooking 20 additional minutes. While grits are cooking, in small saucepan, melt butter. Stir in flour and mustard; cook 5 minutes. When grits are done, vigorously stir in egg yolks. Add butter mixture and cheese; stir well to blend. Beat egg whites until stiff;; fold into grits. Into well-greased 20quart casserole, pour mixture. Bake 45 minutes.
