They say everything is big in Texas and this baker made a grand gesture for her daughter’s wedding cake!
Nikki Jackson, owner of Absolutely Edible Cakes is known for making incredible over-the-top cakes for her clients, including the life-size bride cake which made her famous, but her latest creation truly takes the cake.
Earlier this month the beloved baker made a 7-foot-tall glass-crystal chandelier cake for her daughter’s Toddreana’s wedding. “When the cake lady daughter gets married, what the hell do y’all expect?” Jackson joked with Yahoo Style about the super special occassion.
Jackson worked with her sister, event designer Kimberly Evans of Absolutely Elegant Events, on the over-the-top cake. The sisters originally wanted to create a 24-inch stand, but later decided on a 36-inch wide stand. According to Yahoo Style, “they used real glass crystals instead of the more common plastic kind. In the end, the cake, which could feed 600 (though the guest list was just over 400), cost about $4,500.”
Jakcson later joked with the wedding photographer that her cake would go viral by the end of the night. “The photographer came over to me at about 8 and said, ‘Hey, Nikki. You’re trending.’ I did not expect to wake up the next day and the cake had gone viral,” she said.
