Creole cooking is all about blending terrific flavors, enjoying good times, taking it easy and doing it your way. Which makes this recipe a perfect intro to this great cuisine. Fix it in minutes, spice it just the way you like it, sit back and let it go to town on your taste buds.

Ingredients:
1 pkg. Hillshire Farm Smoked Sausage
1/2 cup chopped green bell pepper
1/3 cup chopped celery
1/4 cup chopped onion
1 can (10 ounces) diced tomatoes with green chilies
3/4 cup water
1 pkg. (5.6 ounces) Spanish rice mix
1/4 cup sliced pimiento-stuffed green olives
1/4 teaspoon ground black pepper

Directions:
Cut sausage in half lengthwise, then cut into 1/2" slices. Heat a 5-6 quart pan over medium-high for 3 minutes. Add sausage, peppers, celery and onion; cook, stirring frequently 4-5 minutes or until vegetables are tender and sausage is lightly browned.

Add all remaining ingredients and bring to a boil, stirring frequently. Reduce heat to medium-low, cover and cook 10-12 minutes or until liquid is absorbed. Remove from heat and let stand 5 minutes before serving.

Cook's Tip: For spicier Creole flavor, use Hillshire Farm Hot Links in place of the smoked sausage.
